Black Lentil stew

 1 Whole Leek or 1 med onion
 5 cloves garlic
 1 celery stick
 1 can of organic fire roasted tomatoes or 3 fresh tomatoes chopped
 1 can of black lentils rinsed and drained
 Half a pound Brown rice spiral pasta or tricolored pasta - can be smashed before cooking to make into smaller bites for little hands if desired
 6 cups water or seasoned veggie stock
 If using water, season with 6 tsp dry veggie stock
 1 teaspoon of sea salt
 1 medium sweet potato
 1 large carrot
 1 tablespoon sesame or sweet almond oil

Bring veggie stock to a boil in a stockpot.

While waiting to boil. Peel and Chop up sweet Potato and carrot.

When boiling add sweet potato carrot and pasta, cook 15 min

While pasta is cooking, chop up onions/leeks garlic and celery

Sauté on medium in 1 tablespoon of oil in a pan.

When onion garlic are lightly browned, add a can of black lentils and tomatoes or fresh. Sauté for about 10 minutes.

When complete add this mixture to the pasta sweet potato mixture. Combine well and serve!
