Brussel sprouts have many health benefits. They are known in Chinese medicine to help with digestion. They are also on the list for cancer prevention. When you combine Brussel sprouts with a gluten free whole grain like brown rice, quinoa or buckwheat they make a complete protein. They also have lots of vitamins like A, B6m C, K, folate, potassium, fiber, iron, selenium and calcium.
Preheat oven to 400 degrees
1. Cut off the all the little brown ends and pull off yellowed outer leaves of the Brussels sprouts.
2. Mix them in a bowl with the olive oil, balsamic vinegar, sea salt, garlic, and shallots.
3. Put them on a sheet pan and roast for 35 minutes or so, until crisp on the outside and tender on the inside.
4. Shake the pan or flip from time to time to avoid burning.
