Roasted Brussel Sprouts

 1 1/2 Pounds of Brussel Sprouts
 3 TBSP of Extra Virgin Coconut Oil or Grapeseed Oil
 1 TBSP Balsamic Vinegar
 1/2 tsp Sea Salt
 1 Shallot - roughly chopped
 1/2 Bulb of Garlic, peeled and left whole

Preheat oven to 400 degrees

1. Cut off the all the little brown ends and pull off yellowed outer leaves of the Brussels sprouts.

2. Mix them in a bowl with the olive oil, balsamic vinegar, sea salt, garlic, and shallots.

3. Put them on a sheet pan and roast for 35 minutes or so, until crisp on the outside and tender on the inside.

4. Shake the pan or flip from time to time to avoid burning.
