Also, if you have heartburn and are weary of giving this a try, rest assured that this recipe was created with the intention to avoid it. I love my chili, but found I couldn’t always eat it because of the high acidic factor. I have found eating some enzymes or drinking a kombucha tea beforehand helps you to enjoy this without the heartburn. I have also omitted ingredients that really contribute to heartburn or cause a lot of mucus. Believe it or not kidneys beans are high on the list of foods that cause mucus and it is considered mildly acidic. You can do it the easy way and go with the BPA-free canned beans. Or even better, if you have the time, soak your own beans. Use 1 ¾ Cup of soaked beans per can.
In a large stockpot, heat olive oil on medium heat, add onions, garlic, chipotle, jalapeno, green pepper, sauté until translucent.
Open all cans or if you are using fresh, add rest of ingredients, bring to a medium boil, stirring frequently.
Cover and cook med/low heat for 45 minutes to 1 hour. The longer and slower it cooks the more the flavors enhance.
